Fish Kabobs

Lake Upsilon Recreation District Board Member Cooky Bertsch

she served these fish kabobs at the first wine walk
     and again at the Oktoberfest...
thus beginning and ending the summer events at Upsilon...

Fish Kabobs by Cooky Bertsch

Soak fish in the refrigerator overnite in 2 beaten eggs and 1 (or more if you have more fish) can of beer.

Place on paper towel and lightly season with Lawry's and lemon pepper.

Wrap 1/3 slice of bacon around each fish piece and secure with toothpick

Place on a broiler pan, so fat can drip off.  Bake in 350 oven for 30 minutes, flip pieces over and bake for 15 minutes, broil on this last side until bacon becomes crispy.  I only broil one side.

BBQ sauce is 2 parts Famous Dave's sweet and tangy and 1 part Jack Daniels original.  I just experiment with the flavor till I like the taste and then add the fish kabobs about 1 hour before serving.
